Originating in Georgia, Saperavi is the dominant red grape variety there, with a history of viticulture and winemaking dating back some 6,000 years. In the late 1990s, Patritti hired a Georgian winemaker. After returning home, he brought a bottle of Saperavi to the winery.

 Everyone was impressed by its outstanding colour, structure and acidity and no further convincing was needed. Soon after, Patriti's oldest grower planted a small vineyard in the Barossa Valley. The name Saperavi literally means ''ink.'' These berries are characterized by dark pink flesh and dark skin, producing deeply colored wines. These vines are highly adaptable and favored in Australia's cooler climates for their ability to survive cold winters, but are also grown in warmer areas.

 

Saperavi is known for its deep purple color and this wine is no exception. The aroma is rich and punchy, with notes of blackcurrant, plum and raspberry leaping out of the glass, but as always there is an earthy and salty element that is so characteristic of Saperavi. The palate is full-bodied and full-bodied in every way; body, tannins and red berry flavors are all evident, but all combine harmoniously with a surprising softness.
